White truffles appear in Alba's forests (€3,000-5,000/kg, but a truffle dinner in a Langhe trattoria costs €40). The Dolomite larches turn gold in mid-October — entire valleys of amber needle-trees beneath pale rock towers, a color palette that exists for exactly 3 weeks. Chestnuts roast on street corners. Mushroom season fills every market. And everything costs 30-40% less than summer.

New olive oil (olio novo) tastings — the first press of the season, spicy, green, poured on bruschetta while still warm. Christmas markets begin in South Tyrol (late November).
