Plan my pizza pilgrimage →#1 Sorbillo (Via dei Tribunali 32). Gino Sorbillo — 3rd generation pizzaiolo, TV celebrity, the ambassador. The margherita (€5): San Marzano DOP, fior di latte, basil from the Vesuvian hills. The dough: 48h fermentation, high hydration, leopard-spotted char. The queue (30-60 min at lunch) is the pilgrimage. The pizza is the reward. The theatrical flip of the dough before the oven is the show.
#2 L'Antica Pizzeria Da Michele (Via Cesare Sersale 1, since 1870). Only 2 pizzas: margherita (€5) and marinara (€4). No menu. No options. The purist's temple. The dough is the softest in Naples — it folds without breaking, the centre almost liquid with tomato and cheese. Eat Pray Love was filmed here (Julia Roberts at table 1). Queue: 20-40 min. The pizza that says "we've been doing this since before your country existed."
#3 50 Kalò (Piazza Sannazaro 201b, Mergellina). Ciro Salvo — the moderniser. The dough is the star: 72h fermentation, light as air, digestible, crispy outer edge, cloudlike interior. The margherita SBK (smoked fior di latte, basil, tomato, €8) is the evolution. The pizzeria that proves Naples pizza can innovate without betraying tradition. Book ahead.
#4 Starita (Via Materdei 27-28, since 1901). Famous for pizza fritta — fried pizza stuffed with ricotta, provola, cicoli (pork cracklings), sealed, deep-fried. Also: the montanara (fried dough base topped AFTER frying with tomato + mozzarella + basil — the crunch + melt combo). Sophia Loren ate here in L'Oro di Napoli (1954). Margherita €5, fritta €4.
#5 Di Matteo (Via dei Tribunali 94). The pizza a portafoglio specialist — full margherita folded twice, €1.50, eaten walking. Also: fried pizza, frittatina, crocchè. The street food pizzeria. Clinton ate here in 1994.
#6 Concettina ai Tre Santi (Via Arena alla Sanità 7bis, Rione Sanità). Ciro Oliva in the Sanità neighbourhood — the most creative toppings on a traditional base. Seasonal specials (pumpkin, truffle, wild herbs). Pizza delivery by basket from the balcony (seriously — they lower it on a rope to the street below). The neighbourhood pizzeria with Michelin ambitions.

1. Eat the crust. The cornicione (puffed edge) is the test of the pizzaiolo — if it's airy, charred, and slightly chewy, the dough was right. If it's dense: wrong fermentation. 2. Fold, don't cut. Neapolitans fold the pizza like a book (a libretto) and eat with hands. Knife and fork: acceptable but marks you as an outsider. 3. Margherita first. Always judge a pizzeria by its margherita — the simplest pizza reveals the dough, the tomato, and the mozzarella with nowhere to hide. 4. Don't ask for modifications. "Extra cheese" or "well done" will get you a look. The pizza is correct as served.
