Stop 2 (9:30am): Mercato Testaccio (Via Beniamino Franklin). The market where Romans actually shop. Stall #65 Mordi e Vai: panino with bollito (boiled beef), salsa verde. €5. The best sandwich in Rome. Stall #86 Le Mani in Pasta: fresh pasta, ravioli cacio e pepe. €6.
Stop 3 (10:15am): Supplizio (Via dei Banchi Vecchi 143, near Campo de' Fiori). Gourmet supplì — classic (rice + mozzarella + ragù, €3) or the cacio e pepe supplì (€4). The best fried rice ball in Rome, elevated from street food to art.
Stop 4 (11:30am): Antico Forno Roscioli (Via dei Chiavari 34). Pizza bianca (white pizza with olive oil + salt, €2/piece) — the benchmark. Eat standing on the sidewalk.
Stop 5 (12:30pm): Piperno (Monte de' Cenci 9, Jewish Ghetto). Carciofi alla giudia — whole artichoke deep-fried until crispy, Jewish recipe from the 16th century, €8-10. Seasonal (October-April). The defining Jewish-Roman dish.
Stop 6 (1:30pm — THE MAIN EVENT): Roscioli (Via dei Giubbonari 21). The carbonara. €14. Made with guanciale (cured pig cheek, NOT bacon), pecorino romano, egg yolk, black pepper. NO CREAM. EVER. This is the definitive version. Pair with a glass of Frascati (€5). Restaurant guide →
Stop 7 (3pm): Gelato at Fatamorgana (multiple locations — Via Laurina 10 near Piazza del Popolo, or Trastevere). Kentucky tobacco flavor. Wasabi chocolate. They're mad scientists with a gelato machine. €3.50 for 2 flavors.
Stop 8 (4pm): Pizzarium Bonci (Via della Meloria 43, near Vatican). Gabriele Bonci's pizza al taglio — the best pizza by-the-slice on Earth. Toppings change daily. Everything is extraordinary. €4-6 for 2-3 pieces. This alone justifies a trip to Rome.
Stop 9 (5:30pm): Aperitivo at Freni e Frizioni (Via del Politeama 4-6, Trastevere). Cocktail €10 with buffet that counts as dinner.
Stop 10 (8pm): Da Enzo al 29 (Trastevere, Via dei Vascellari 29) — cacio e pepe. Or Flavio al Velavevodetto (Via di Monte Testaccio 97, Testaccio — built into ancient pottery mountain, amatriciana legendary).
Stop 11 (10pm): Grattachecca — Roman shaved ice, sold from kiosks along the Tiber in summer. Sora Mirella (Lungotevere Anguillara, near Isola Tiberina). Lemon + coconut. €3. Roman summer in a cup.
Stop 12 (11pm): Trapizzino (Via Giovanni Branca 88, Testaccio). The midnight snack: pizza pocket filled with Roman stews (coda alla vaccinara, pollo alla cacciatora). €3.50. Perfect closure.
