What you'll eat

Arancina: Fried rice ball (see the gender debate in our arancino guide). €1.50-2.50. Panelle: Chickpea flour fritters in a sesame roll. €2. Addictive. Sfincione: Thick Sicilian pizza with tomato, onion, anchovies, breadcrumbs. €2-3/slice. Pani câ meusa: Spleen sandwich. Yes, spleen. Boiled and chopped calf spleen and lung in a sesame roll, either schietto (plain, with lemon) or maritato (with ricotta and caciocavallo cheese). €3-4. Challenging and extraordinary. Stigghiola: Grilled lamb or goat intestines wrapped around a skewer. €3. Street BBQ at its most primal.

Where

Ballarò market: The most chaotic, the most authentic. Street food stalls between market vendors. Vucciria market: More touristy but still excellent. Borgo Vecchio: Near the port, less visited, great stigghiola stands.

💡 The pani câ meusa test: If you eat spleen sandwich in Palermo and enjoy it, you have graduated from tourist to traveler. If you don't enjoy it, that's also fine — the arancine are across the street.
