The acetaia visit

Dozens of acetaie (vinegar producers) in Modena open to visitors. You'll climb to the attic where the batteria (series of barrels, typically 5-7, decreasing in size) sits. The host explains the rincalzo โ€” the annual topping-up process where vinegar is transferred from larger to smaller barrels as it concentrates. The smallest barrel produces perhaps 1-2 liters per year. The tasting: Tradizionale Affinato (12 years โ€” sharp, complex, bright) vs Tradizionale Extravecchio (25 years โ€” thick as honey, sweet-sour, infinite finish). Once you taste real Tradizionale, supermarket balsamic tastes like brown water.

How to tell real from fake: DOP Tradizionale comes ONLY in a specific 100ml bottle designed by Giorgetto Giugiaro. If it's in any other bottle, it's not Tradizionale.
