Amarone della Valpolicella is made by a process that no rational person would invent. In September, Corvina, Corvinone, and Rondinella grapes are picked healthy, then laid on bamboo racks (arele) in ventilated lofts (fruttai) for 3-4 months. They dry, losing 30-40% of their weight, concentrating sugars and flavors until they're nearly raisins. In January, the shriveled grapes are pressed and fermented โ a slow, difficult fermentation that produces a wine of 15-16% alcohol, dense with dried cherry, dark chocolate, tobacco, and spice. Three valleys north of Verona: Val di Negrar, Val di Marano, Val di Fumane โ plus the extension zone toward Soave. The Classico zone (the original three valleys) produces the most valued wines. The landscape: terraced hillsides, cherry orchards (Valpolicella means "valley of many cellars"), stone pergola vine-training systems, and the fruttai (drying lofts) on every farm โ wooden-slatted buildings where the grape-drying happens. In autumn (October-November), the fruttai smell extraordinary โ concentrated grape perfume wafting from every building.
Getting there: Valpolicella starts 10km north of Verona. Car essential for winery visits. From Verona station: rent a car (20min to the first wineries). Stay: Verona (€70-140/night โ walk to the Arena, eat in the old town), or in Valpolicella agriturismi (€60-110). Eat: Trattoria dalla Rosa Alda (San Giorgio di Valpolicella โ the best Amarone-friendly menu in the valley, €35-50). Wine prices (retail): Valpolicella Classico €8-15, Ripasso €12-25, Amarone €30-80+, Recioto (sweet version) €25-50.
