The thing โ warm, stretchy, milky, with a thin skin that gives way to a soft interior that releases a gush of buttermilk when you bite โ is available only at the caseifici (dairy farms) of Campania, where water buffalo have grazed the Piana del Sele and the Caserta lowlands since the Middle Ages. You can visit these farms, watch the cheesemakers pull the curd in scalding water at 6am, and eat mozzarella that is literally minutes old. Casearia Ferraiuolo (Alvignano, Caserta): Small artisan producer, intimate visit. The Caserta plain and the Paestum/Battipaglia area are the two main zones โ both within day-trip range of Naples.
Mozzarella di Bufala Campana DOP (the ball): The classic. Eat it plain โ salt, maybe a drop of oil, definitely with your hands. Bocconcini: Small balls. Treccia: Braided. Burrata: A mozzarella shell filled with stracciatella (shredded mozzarella and cream) โ technically from Puglia, but many Campania farms make it too. Provola affumicata: Smoked mozzarella โ the smoking adds a depth that's extraordinary with roasted vegetables. Ricotta di bufala: Sweet, light, perfect with honey. Buffalo yogurt and gelato: Richer, creamier than cow-milk versions.
When: production starts at 4-6am. Visits usually from 9-11am. Book ahead โ most farms accept visitors but need notice. Getting there: Paestum area is 1.5h south of Naples (car or train to Paestum station). Caserta area is 40min north of Naples.
