Paestum (ancient Poseidonia, founded by Greek colonists c.600 BC) has the three best-preserved Doric temples in the world โ better than the Parthenon, better than anything in Sicily, better than anything in Greece itself. The Temple of Hera II ("Temple of Neptune," 450 BC) stands almost complete โ all columns, both pediments, the entablature โ in a state of preservation that makes you feel you could walk inside and find the cult statue still there. The Basilica (Temple of Hera I, 550 BC) is the oldest, with its characteristic entasis (column swelling). The Temple of Athena (Temple of Ceres, 500 BC) sits on higher ground between the other two. The Museo Archeologico has the Tomb of the Diver (480 BC) โ the only example of Greek painting from the Classical period, showing a young man diving from a platform into water โ a metaphor for the passage from life to death that is 2,500 years old and still moves people to tears. The Piana del Sele around Paestum is Italy's premier buffalo mozzarella production zone. Water buffalo graze within sight of the temples. Visit a caseificio (dairy): Vannulo (organic buffalo farm + dairy + mozzarella bar โ watch production 7-10am, taste immediately after, โฌ5-8), Barlotti, Tempio (all within 5km of the temples). Fresh buffalo mozzarella eaten within hours of production, 2km from Greek temples, is one of Italy's greatest food experiences.
