Norcia/Spoleto area: The heart of Umbrian truffle country. The Valnerina valley is rich hunting ground. Norcia's shops are stacked with truffle products. Similar format to Piedmont: early morning walk with trifolao and dog, 1.5-2 hour hunt, then lunch featuring the truffle. Umbrian lunches tend toward rustic: handmade strangozzi pasta with truffle, grilled meats, lentils from Castelluccio, local Sagrantino or Montefalco Rosso wine.
