Plan your Italy trip โDried-grape wine (appassimento method). Corvina, Rondinella, Corvinone grapes are dried on straw mats for 3-4 months before pressing โ concentrating sugars and flavors. Amarone DOCG is massive, rich, 15-16% alcohol, and ages 20+ years. Valpolicella Classico (lighter, everyday) and Ripasso (a "baby Amarone" technique) round out tastings. The drying rooms (fruttai) are extraordinary to visit in autumn-winter when filled with drying grape clusters.
