Modica โ€” the baroque city in a canyon where Aztec-recipe chocolate is made cold, churches climb staircases, and the upper and lower towns create the most dramatically vertical cityscape in southeast Sicily

Modica fills a deep canyon and its two ridges, creating a city in three layers: Modica Bassa (the canyon floor), Modica Alta (the ridge above), and the churches and palazzi cascading between them on staircase-streets. The baroque rebuilding after the 1693 earthquake (UNESCO Val di Noto) exploited this topography to create some of the most theatrical church facades in Sicily โ€” San Giorgio (1702-38) rises at the top of a monumental staircase of 250 steps, its concave-convex facade visible from the entire lower town like a stage set. The chocolate: Modica's cioccolato is made using a cold-processing technique (reportedly learned from the Aztecs via the Spanish, who ruled Sicily) โ€” the cocoa is mixed with sugar at low temperature, producing a grainy, crystalline texture and a purer chocolate flavor than conched European chocolate. What to see

Chiesa di San Giorgio (1702-38): The 250-step staircase approach โ€” the facade (5 tiers of columns) grows as you climb, creating a Baroque crescendo. Inside: a polyptych attributed to Gagini. Chiesa di San Pietro (Modica Bassa): The "lower" major church โ€” a long staircase flanked by the 12 Apostles in stone. Corso Umberto I: The main street running through Modica Bassa โ€” baroque palazzi, churches, and the chocolate shops. The Castello dei Conti: At the highest point of Modica Alta โ€” a Norman-era rock-cut fortress with panoramic terrace. Free.

Chocolate

Cioccolato di Modica IGP: Cold-processed โ€” the sugar crystals remain intact, giving a crunchy texture. Flavors: vanilla (the original), cinnamon, chili, citrus, carob, salt. Antica Dolceria Bonajuto (Corso Umberto 159): The oldest chocolate shop in Sicily (since 1880) โ€” the reference. €4-8 per bar. Caffรจ dell'Arte: Another excellent producer. Eurochocolate Modica (December): A chocolate festival with tastings and workshops. Pair with: Ragusano DOP cheese and Nero d'Avola wine โ€” the Modica trifecta.

Practical

Getting there: Car from Ragusa (15min), Syracuse (1h), Catania (1.5h). Bus from Ragusa (30min, AST). Stay: €50-95/night.
